Warming Beet & Carrot Purée with Ginger

This warming purée combines earthy beets and naturally sweet carrots with a touch of fresh ginger. Gentle on the stomach and rich in nutrients, it supports circulation and vascular health. Perfect as a nourishing, cozy meal, it highlights seasonal vegetables in a simple, comforting way.

Serves 2 

Ingredients (organic/biodynamic):

  • 2 medium beets, peeled and cut into chunks
  • 2 medium carrots, peeled and sliced into rounds
  • 1–2 tsp. freshly grated ginger (adjust to taste)
  • 1 garlic clove, optional
  • 1–1½ cups water or low-sodium vegetable broth
  • Fresh lime juice, to finish
  • Pinch of Celtic Sea Salt®
  • Fresh parsley or carrot curls, for garnish (optional)

Instructions:

  1. Place the beets, carrots, ginger, and garlic (if using) in a saucepan.
  2. Pour in just enough water or broth to cover the vegetables.
  3. Cover the pot, place on the stove over medium heat and simmer gently until the vegetables are tender, about 25–30 minutes.
  4. Transfer the vegetables along with some cooking liquid to a blender or use an immersion blender.
  5. Blend until you reach a soft, lightly textured purée, adding more liquid if needed.
  6. Taste and finish with fresh lime juice and a pinch of Celtic Sea Salt® as desired.
  7. Garnish with fresh parsley or thin carrot ribbons, if using, and serve warm.
