Vitalizing Vegan Vegetable Broth

This rich and flavorful vegan broth is delicious on its own, or use it as a base to create your favorite soups and stews, or in any recipe that calls for broth.

Serves 8

Ingredients (organic/biodynamic)

  • 1 red onion, cut into eighths
  • 2 carrots, roughly chopped
  • 2 celery stalks, roughly chopped
  • 3 cloves garlic, smashed
  • 1 leek, sliced
  • 1 bay leaf
  • 1/2 tsp. whole peppercorns
  • Handful of fresh parsley
  • 8 c. water
  • Celtic Sea Salt®, to taste

Instructions

  1. In a large pot, combine all the vegetables, smashed garlic, bay leaf, peppercorns, and parsley.
  2. Add 8 cups of water to the pot, or enough to cover the vegetables.
  3. Simmer on the stove for approximately 45 minutes to 1 hour.
  4. Strain the broth through a fine-mesh sieve or cheesecloth.
  5. Add Celtic Sea Salt, to taste.
  6. Garnish with parsley, and serve!
  7. If saving for future use, allow the broth to cool, then transfer it to containers for storage.
  8. Store in the refrigerator for up to 5 days, or freeze for up to several months.
  9. Use it as a homemade base for any recipe calling for broth.
