This rich and flavorful vegan broth is delicious on its own, or use it as a base to create your favorite soups and stews, or in any recipe that calls for broth.
Serves 8
Ingredients (organic/biodynamic)
- 1 red onion, cut into eighths
- 2 carrots, roughly chopped
- 2 celery stalks, roughly chopped
- 3 cloves garlic, smashed
- 1 leek, sliced
- 1 bay leaf
- 1/2 tsp. whole peppercorns
- Handful of fresh parsley
- 8 c. water
- Celtic Sea Salt®, to taste
Instructions
- In a large pot, combine all the vegetables, smashed garlic, bay leaf, peppercorns, and parsley.
- Add 8 cups of water to the pot, or enough to cover the vegetables.
- Simmer on the stove for approximately 45 minutes to 1 hour.
- Strain the broth through a fine-mesh sieve or cheesecloth.
- Add Celtic Sea Salt, to taste.
- Garnish with parsley, and serve!
- If saving for future use, allow the broth to cool, then transfer it to containers for storage.
- Store in the refrigerator for up to 5 days, or freeze for up to several months.
- Use it as a homemade base for any recipe calling for broth.
