This refreshing recipe combines tomatoes, cucumbers, and red bell pepper with garlic, onion, and basil, enhanced by lime juice and apple cider vinegar. It’s an easy, flavorful dish perfect for a light meal or a cooling side, capturing the essence of summer in every bite.
Ingredients (organic/biodynamic):
- 6 cups chopped tomatoes with skin on
- 2 cups chopped, de-seeded and peeled cucumbers
- ¾ cup minced red onion
- ½ cup chopped scallions
- 3 cloves of garlic (about 1 Tbsp)
- 1 cup chopped red bell pepper
- ½ cup packed basil
- 2 Tbsp apple cider vinegar
- 1½ Tbsp fresh lime juice
- ½ tsp Celtic Sea Salt® (optional, to taste)
Instructions
- Place all ingredients into blender.
- Blend on low speed, and then higher for a few seconds. Blend to desired consistency.
- Chill or eat right away and serve topped with fresh scallions.
