Simple Summer Gazpacho Recipe

This refreshing recipe combines tomatoes, cucumbers, and red bell pepper with garlic, onion, and basil, enhanced by lime juice and apple cider vinegar. It’s an easy, flavorful dish perfect for a light meal or a cooling side, capturing the essence of summer in every bite.

Ingredients (organic/biodynamic):

  • 6 cups chopped tomatoes with skin on
  • 2 cups chopped, de-seeded and peeled cucumbers
  • ¾ cup minced red onion
  • ½ cup chopped scallions
  • 3 cloves of garlic (about 1 Tbsp)
  • 1 cup chopped red bell pepper
  • ½ cup packed basil
  • 2 Tbsp apple cider vinegar
  • 1½ Tbsp fresh lime juice
  • ½ tsp Celtic Sea Salt® (optional, to taste)

Instructions

  1. Place all ingredients into blender.
  2. Blend on low speed, and then higher for a few seconds. Blend to desired consistency.
  3. Chill or eat right away and serve topped with fresh scallions.
