Herbed Chickpea & Quinoa Power Bowl

Packed with plant-based protein and fresh flavor, this bowl features hearty chickpeas, fluffy quinoa, and a medley of vegetables. A fragrant mix of mint, parsley, and cilantro brings brightness, while lime juice ties it all together with a refreshing finish. Perfect as a nourishing meal or colorful side, this dish is both satisfying and energizing.

Ingredients (all organic or biodynamic):

  • 4 c. cooked chickpeas
  • 1/2 c. chopped red onion
  • 1 c. chopped tomatoes
  • 1 large garlic clove, grated
  • 1 Tbsp. chopped mint
  • 1 Tbsp. chopped parsley
  • 1 tsp. Celtic Sea Salt®
  • 1 tsp. freshly ground black pepper
  • 4 c. cooked quinoa
  • 1 orange bell pepper, chopped
  • 2 c. of chopped cucumber
  • 1/2 c. chopped cilantro
  • Juice of 2 limes

Instructions:

  1. In a medium mixing bowl, toss together chickpeas, red onion, tomatoes, garlic, mint, parsley, salt, and pepper until well combined. Let the mixture sit for a few minutes to allow the flavors to meld.
  2. For each serving, spoon 1 cup of quinoa into a bowl. On one side, layer the bell pepper and cucumber; on the other, scoop a generous portion of the chickpea mixture.
  3. Sprinkle with fresh cilantro and drizzle with the juice of half a lime. Serve immediately.
