Ingredients (all organic or biodynamic):
- 4 c. cooked chickpeas
- 1/2 c. chopped red onion
- 1 c. chopped tomatoes
- 1 large garlic clove, grated
- 1 Tbsp. chopped mint
- 1 Tbsp. chopped parsley
- 1 tsp. Celtic Sea Salt®
- 1 tsp. freshly ground black pepper
- 4 c. cooked quinoa
- 1 orange bell pepper, chopped
- 2 c. of chopped cucumber
- 1/2 c. chopped cilantro
- Juice of 2 limes
Instructions:
- In a medium mixing bowl, toss together chickpeas, red onion, tomatoes, garlic, mint, parsley, salt, and pepper until well combined. Let the mixture sit for a few minutes to allow the flavors to meld.
- For each serving, spoon 1 cup of quinoa into a bowl. On one side, layer the bell pepper and cucumber; on the other, scoop a generous portion of the chickpea mixture.
- Sprinkle with fresh cilantro and drizzle with the juice of half a lime. Serve immediately.
