Enjoy the holidays with these delicious Date and Nut Truffles! They are easy to make, and healthier than most truffles, using dates for natural sweetness, heart-healthy cocoa powder for heart-healthy antioxidants, and unsalted nuts for protein and healthy fats.
Ingredients (organic/biodynamic)
- 1 c. dates, pitted
- 1 c. unsalted mixed nuts (almonds, walnuts, or cashews)
- 1/4 c. unsweetened cocoa powder
- 1 tsp. vanilla extract
- Shredded coconut or crushed nuts for coating (optional)
Instructions
- In a food processor, blend dates, nuts, cocoa powder, and vanilla extract until sticky dough forms.
- Roll the mixture into small truffle-sized balls.
- Optionally, roll the truffle balls in shredded coconut or crushed nuts for coating
- Refrigerate for about 30 minutes before serving.
