Crunchy Nori Veggie Wraps with Creamy Almond Ginger Sauce

These nori-wrapped vegetable rolls with almond ginger dipping sauce are a gut-friendly, stress-relieving meal packed with fiber, antioxidants, and essential nutrients. Purple cabbage, alfalfa sprouts, and zucchini support digestion and a healthy gut microbiome, while nori provides iodine for thyroid function. Almond butter offers magnesium to ease stress, and ginger and garlic aid immunity and digestion.

Ingredients (organic/biodynamic):

  • 2 c. alfalfa sprouts
  • 4 nori sheets
  • 1 c. shredded purple cabbage
  • 1 small carrot, julienned
  • ½ c. cucumber, julienned
  • ½ red pepper, thinly sliced
  • ½ c. zucchini, julienned
  • ½ avocado, sliced

Instructions:

  1. Place a nori sheet on a clean, dry surface with the long side facing you and the shiny side down.
  2. Assemble the Roll – Evenly spread ¼ cup of alfalfa sprouts over the nori, followed by a mix of red cabbage, carrots, cucumber, red pepper, zucchini, and avocado. Keep the filling near the edge closest to you for easy rolling.
  3. Gently roll the nori away from you, tucking in the filling as you go. Dab the edge with water to seal.
  4. Cut the roll in half with a sharp knife. Repeat with the remaining ingredients.
  5. Serve with almond ginger sauce.

Almond Ginger Sauce

Serves: 4

Ingredients (organic/biodynamic):

  • 2 Tbsp. almond butter
  • 1 Tbsp. coconut aminos
  • 2 Tbsp. water
  • ½ tsp. grated ginger
  • ½ tsp. minced garlic

Instructions:

  1. In a small bowl, whisk together the almond butter, coconut aminos, water, grated ginger, and minced garlic until smooth.
  2. Adjust the consistency by adding more water if needed.
