½ small cabbage sliced thin
3 C collard greens coarse chopped
3 medium garlic cloves sliced thin
½ medium onion sliced thin
2 small carrots sliced (coins)
2 Tbsp avocado oil
1 C vegetable broth
1 Tbsp ground turmeric
2 Tbsp curry powder
Red pepper flakes to taste, optional
Salt & Pepper to taste, optional
- Chop/slice all veggies. Sauté all veggies in avocado oil approximately 3 minutes.
- Add turmeric and curry powder. Sauté for 2 more minutes.
- Add vegetable broth, reduce heat, simmer for 5 minutes.
- Sprinkle with red pepper flakes, salt & pepper (optional and super tasty!) Serve as a side or main dish.
Any protein could be added or served over wild rice.
